I work as a doctoral student in the research field of industrial biotechnology. My research aims at investigating the nutritional digestibility of edible filamentous fungi in the human digestive system. Edible filamentous fungi is considered one of the emerging sustainable meat alternatives and it is interesting to investigate what happened to the fungi in the human stomach after being eaten as food. Using an in-vitro gastrointestinal model, I am aiming to study the protein digestibility, mineral digestibility, and lipid digestibility of edible filamentous fungi.
